Candy Corn Cookies for Halloween!

I was in Target last night and came across some Hershey’s kisses – candy corn flavored!  Judging from the ingredients, I don’t think there’s any chocolate in them, but they look just like a piece of candy corn and they taste just like it too, though maybe a bit less chewy.

I wasn’t going to buy them, but I was intrigued by the recipe on the wrapper, which I give to you now.  Actually, I’m giving you my altered version because the one on the bag seemed really complicated and had way too many quick oats in it, in my opinion.

3/4 cup PB
1/2 cup softened butter
1/3 cup granulated sugar, plus some extra
1/3 cup packed light brown sugar
1 egg
2 tbs milk
1 tsp vanilla extract
1/2 cup quick oats
1 cup all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 bag Hershey’s Candy Corn Flavored Candies

1.  Beat PB and butter until well blended.  Add granulated sugar and brown sugar; beat until fluffy.  Add egg, milk, and vanilla, beat well.  Stir together in a separate bowl oats, four, baking soda and salt.  Slowly beat into dough.

2.  Preheat oven to 350.  Roll dough into one inch balls and roll in granulated sugar (original recipe called to have them rolled in more oats.)

3.  Bake 10 to 12 minutes.  Cool slightly on cookie sheet and before removing, press a Candy Corn Kiss into the center of each cookie, then remove to cooling rack.

The original recipe called for melting and drizzling and such that I just didn’t feel like dealing with.  Here’s my final result which was delicious:
